If you’re like me and your favourite cake decorating medium is buttercream it’s so important to have a full proof recipe. I’ve been using the same recipe for years now, I’ve tweaked it over time and is now absolutely perfect every time I make it.


  • 250g unsalted butter (softened at room temperature)
  • 250g butter (softened at room temperature)
  • 1kg icing sugar
  • 1/4 cup water
  • 1 Tablespoon of vanilla extract
  1. Cream your butter until it is light, fluffy and pale.
  2. Add water and mix.
  3. Add your icing sugar.
  4. Cover your mixer with a damp teatowel then mix on medium to combine icing sugar.
  5. Mix on med/high until no air bubbles remain.
  6. Add vanilla and whitener/gel colour and mix until perfect colour is reached.

I normally always double this recipe and it turns out so well every time.
