Welcome to quick tip Thurday! Today I want to talk about drip cakes, they look gorgeous and once you know how they are so easy to do!

The first thing you want to do is start with a cold cake, so once you’ve iced your cake pop it in the fridge to cool while you make your ganache.

Getting the perfect ganache is super simple. Use equal parts heavy cream and chocolate. Heat the cream until it is super hot and then start stirring in the chocolate a little at a time. To colour your ganache use a few drops of gel colour. Water based colours are a big NO, chocolate and water are not friends.

Get your drip on. They are so many different ways to add your drip to your cake. My personal favourite is to put my ganache into squeezy bottles. It gives me great control for precise dripping.

Get creative. Once your comfortable with using ganache to drip you can try mixing it up. To get the thick melted crayon look on Elliot’s Arty Party cake I used 1 part cream to 2 parts chocolate.

Most importantly have fun and practice lots!
